I've not had problems with remastering Knoppix. There is some good
starting info in Knoppix Hacks by Kyle Rankin </shameless plug>. I know
Kyle Schneider has a copy of it. It shouldn't be too much to customize it
to be MTULUG themed (new wallpaper or something) it gets to be a pain when
you go to install new packages and the like.

I would almost recommend remastering an Ubuntu Live CD. This way if the
user likes what they are seeing they have a nice wizard based installer
they can click on that will take care of most of the hard stuff for them
(partition resizing and the like).
