Came up with a sample outline ...
 
I. What is Linux? - (Really dumb it down at first)
II. Linux at Tech - (What kind of things to expect on the lab computers)
III. More about Linux - (Could be divided into multiple subcategories ... ex: Desktop Environments, Distributions, etc )
IV. LUG - (What we are all about, how to join, when our meetings are, etc.)
 
Demonstrations can be interjected at any point, although it would seem most conducive to show demos during the More about Linux section.
 
This is really really generalized.  Not sure how much work is actually done so far, but this is my two cents.
